Celebrating Ramadan

No classless today nationwide here in the Philippines because it is Ramadan that's why some kids are really happy because they can play with their friends today.

What Ramadan anyway??Ramadan is the name of the ninth month of the Hijri (Islamic) calendar. According to the Dictionary of Islam, the word Ramadan is derived from the word ramd, "to burn" (Ramadan is associated with fasting, during which sins are said to be figuratively burned away).

Fasting (Sawm) is one of the core five pillars of Islam. The others are: Shahadah (the testimony of faith), Salat (ritual prayer), Zakat (obligatory religious almsgiving), and the Hajj (the pilgrimage to Mecca). During this month Muslims from around the world are required to fast from dawn to dusk. During the fast Muslims may not eat, drink, smoke, or engage in sexual activity. Although fasting is made obligatory to believers of Islam, some groups are excluded: children who are not yet adolescent, the elderly and the chronically ill for whom fasting would be unreasonably strenuous, pregnant women and nursing mothers, the mentally retarded, travelers, and women during periods of menstruation

All Muslim are celebrating the end of fasting today that's why President Gloria Arroyo announced nationwide to have no classes to join the celebration.

My daugther's attitude

I noticed that lately my daughter was always crying and everytime she cries? she always go on me. She also cried everytime I leave in the house. She always want me to be with her even in our room. She sleep in the top of my tummy when im laying down. She also learn how to ask money on me and after I gave her money she automatically run and went to a nearby store. My gosh, I thought it was an ordinary attitude to a kid who's growing up but my mother said "don't spoiled your daughter because it bring her when she grow up". What should I do? At the age of 2 she learn a lot of bad attitude from her environment.

FILLET OF FISH IN SANGRIA SAUCE

Ingredients :

12 white fish fillets

½ cup (125 ml) all purpose flour

salt and pepper, to taste

3 tbsp (45 ml) lemon juice

4 tbsp (60 ml) butter

juice of ½ orange

1 tbsp (15 ml) grated orange zest

¼ cup (60 ml) rose or white wine

2 eggyolks, beaten

cayenne pepper, to taste

¼ cup (60 ml) cream

1 tbsp (15 ml) chopped parsley

1 tsp (5 ml) extra butter

peel from 1 orange, cut in fine strips and blanched

Procedure :

Coat fish fillets in combined flour, salt and pepper. Combine half the lemon juice and half the butter in frying pan. Heat till butter melts, Fry 6 fish fillets, 2 minutes on each side. Set fish fillets aside on platter. Drain juices from pan. Heat remaining lemon juice and butter and fry remaining fish fillets. When cooked, place on serving platter, cover with aluminum foil and keep warm in oven.

Combine orange juice, zest and white wine in top of double boiler. Bring to boil, then reduce heat simmer. Add eggyolks and cayenne, stirring until thickened. Removed pan from heat.

Stir in cream, parsley and butter. Pour sauce over fish fillets and serve garnished with orange strips.
